The cocoa beans
The cocoa beans are cooled with a fan and ground: they are removed from their outer shell and crushed to become a grain
The fruits of the tree become a sweet cocoa paste: it's the time of conching, followed by tempering.
Shaping the creations
This is the moment in which the granite mixer is used, the most suitable material to maintain a constant temperature. This is a delicate phase, in which the cocoa is about to merge with the other flavours, thus becoming a unique creation. Whether the chocolate is dark, milk or white, this is the time when each Gay Odin creation is given personality.
